Certain varieties, Pinot Noir in particular, of grape-skins from wineries in the Pacific Northwest have been preselected for valorization. Consideration of their utility has focused on their stability post pressing and/or fermentation, polyphenolic content and the attractive ratios of soluble and insoluble dietary fibers. We have now developed shelf-stable, gluten-free flours suitable for baking applications, flavor and color enhancement as well as cosmetic grade pigments.
